Ingredients:
- 1 cup red bell peppers, diced
- 1 cup orange carrots, shredded
- 1 cup yellow corn kernels
- 1 cup green cucumber, chopped
- 1 cup blueberries
- 1 cup purple cabbage, thinly sliced
- 1/2 cup cooked quinoa
- 1/4 cup fresh cilantro leaves, chopped
- 1/4 cup toasted sunflower seeds
- 1/4 cup crumbled feta cheese optional
- Salt and pepper to taste
Instructions:
Dice the red bell pepper and shred the orange carrots together in a large bowl
Put the chopped green cucumber and yellow corn kernels in the bowl
Add the blueberries and thinly sliced purple cabbage slowly
Add the cooked quinoa to give it more texture and help it stay healthy
Toast some sunflower seeds and chop up some fresh cilantro leaves to put on top of the salad
You can add crumbled feta cheese for extra flavor if you want to
