Blueberry Streusel Muffins



These Blueberry Streusel Muffins have a delicious cinnamon streusel topping on top of a soft muffin filled with sweet, juicy blueberries. You can eat them for breakfast or as a tasty snack.

Ingredients:

  • 1 and 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup vegetable oil
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups fresh blueberries
  • For Streusel Topping:
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 2 tablespoons cold butter, cubed
  • 1/2 teaspoon ground cinnamon

Instructions:

Warm your oven up to 375 F 190 C and put paper liners in a muffin tin

Whisk the flour, sugar, salt, and baking powder together in a bowl

Put the milk, egg, vanilla extract, and vegetable oil in a different bowl

Add the wet ingredients to the dry ones and mix them together just until they are mixed

The fresh blueberries should be added slowly

To make muffins, put about two thirds of the batter into each cup

To make the streusel topping, put sugar, flour, cold cubed butter, and ground cinnamon in a small bowl and mix them together until they look like coarse crumbs

Cover all of the muffin batter in each cup with streusel topping

After the oven is hot, bake the muffins for 18 to 20 minutes, or until a toothpick inserted into the middle comes out clean

After taking the muffins out of the oven, let them cool for 5 minutes in the pan

Then, move them to a wire rack to cool all the way through
