Back-to-School Apple Cookies



These delicious apple cookies are ideal for the start of the school year. They're a tasty and nutritious treat that's packed with grated apples and warm spices. For added texture and flavor, add raisins and walnuts.

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 1 cup grated apple peeled and cored
  • 1/2 cup raisins optional
  • 1/2 cup chopped walnuts optional

Instructions:

Mix the flour, baking soda, baking powder, salt, ground cinnamon, and ground nutmeg together in a bowl using a whisk

Melt the butter and mix it with the white sugar and brown sugar in a different large bowl until the mixture is light and fluffy

Add the egg and vanilla extract and mix them in well

Slowly add the dry ingredients to the wet ones, mixing them in with the milk every so often

Don't mix any further than that

If you want, you can add the raisins and chopped walnuts after you've mixed in the grated apple

Put the dough in the fridge for at least 30 minutes with the lid on

Warm your oven up to 350F 175C and put parchment paper on a baking sheet

When the dough is ready, take it out of the fridge and drop rounded tablespoons of it onto the baking sheet that has been prepared

Leave space between each cookie

Make each cookie a little flatter with the back of a spoon

For 10 to 12 minutes, or until the edges are just beginning to turn golden

Let the cookies cool for 5 minutes on the baking sheet before moving them to a wire rack to cool all the way
