Chicken Pasta Milano

Ingredients:

  • 8 oz penne pasta
  • 2 chicken breasts, thinly sliced
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions:

Cook pasta according to package instructions

Drain and set aside

In a large skillet, heat olive oil over medium heat

Add chicken slices and cook until golden brown, about 5-7 minutes

Add minced garlic and cook for another minute

Stir in sun-dried tomatoes, heavy cream, chicken broth, Parmesan cheese, and dried basil

Simmer for 5-7 minutes until the sauce thickens slightly

Season with salt and pepper to taste

Add cooked pasta to the skillet and toss until well coated with the sauce

Serve hot, garnished with additional Parmesan cheese and basil if desired
