A hearty and tasty Instant Pot Gumbo made with shrimp, chicken, andouille sausage, and a mix of tasty Cajun spices. This recipe for a quick and easy pressure cooker meal is great for a comforting meal.
Ingredients:
- 1 lb chicken thighs, boneless and skinless, diced
- 1 lb Andouille sausage, sliced
- 1 lb shrimp, peeled and deveined
- 1 cup onion, diced
- 1 cup bell pepper, diced
- 1 cup celery, diced
- 3 cloves garlic, minced
- 1 can 14 oz diced tomatoes
- 1 cup okra, sliced
- 1 cup rice
- 4 cups chicken broth
- 2 tablespoons flour
- 2 tablespoons oil
- 1 teaspoon thyme
- 1 teaspoon oregano
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- Salt and pepper to taste
Instructions:
Set the Instant Pot to Saute
Add flour, salt, and pepper to the chicken
Add oil to the Instant Pot and brown the chicken
Go ahead and add the garlic, onion, bell pepper, sausage, and celery
Cook the vegetables until they are soft
Add the oregano, paprika, cayenne pepper, and thyme
Let them mix in
Potatoes, okra, rice, and chicken broth should all be added
Combine well
Place the lid back on top of the Instant Pot and set it to Manual mode
When the food is done cooking, do a quick pressure release
Add the shrimp and stir it in
It will take a few minutes for the shrimp to cook all the way through
Add more salt and pepper if you think it needs it
Serve hot with green onions on top, and enjoy!
