Spinach Artichoke Grilled Cheese Sandwich



Enjoy the smooth and creamy spinach and artichoke dip inside a crunchy grilled cheese sandwich. This recipe takes the flavors of a classic dip and puts them together with the comfort of grilled cheese to make a meal that's great for any event.

Ingredients:

  • 2 slices of bread
  • 2 tablespoons of butter
  • 1/2 cup of chopped spinach
  • 1/4 cup of chopped artichoke hearts
  • 1/4 cup of shredded mozzarella cheese
  • 1/4 cup of shredded Parmesan cheese
  • 2 tablespoons of cream cheese
  • 1 clove of garlic, minced
  • Salt and pepper to taste

Instructions:

In a skillet over medium heat, melt 1 tablespoon of butter

Add minced garlic and cook until fragrant, about 1 minute

Add chopped spinach and artichoke hearts, season with salt and pepper, and cook until spinach is wilted, about 2-3 minutes

Remove spinach and artichoke mixture from the skillet and set aside

Spread cream cheese on one side of each slice of bread

On the non-cream cheese side of one slice, layer half of the shredded mozzarella cheese, then the spinach and artichoke mixture, followed by the remaining mozzarella and Parmesan cheeses

Top with the other slice of bread, cream cheese side down, to form a sandwich

In the same skillet, melt the remaining tablespoon of butter over medium heat

Place the sandwich in the skillet and cook until golden brown and crispy on both sides, about 2-3 minutes per side

Remove from heat, slice in half if desired, and serve hot
